Family Recipes That Go Great With Our Wines!

BOLOGNESE SAUCE

Enjoy this Traditional Northern Italian sauce that goes well with Rigatoni, Ziti or Spaghetti.

¼ cup butter
2 Tbsp extra virgin olive oil
1 medium onion, finely chopped
1 celery stalk, finely chopped
1 carrot, finely chopped
¼ cup pancetta, finely chopped
1 ½ lb ground veal
1 28-oz can crushed tomatoes
1 cup dry white wine
½ cup milk
Dash of salt & pepper.

Melt butter & oil. When butter foams, add vegetables & pancetta. Sauté until brown. Add veal, cook until no longer pink. Add wine and tomatoes, cover, reduce heat & simmer 1 to 1 ½ hours. Add milk during last five minutes of simmer.

MEATBALLS

1 lb ground beef
½ lb ground veal
½ lb ground pork
2 large eggs
1 cup Romano cheese, grated
1½ Tbsp parsley
½ clove garlic
2 cups bread crumbs
2 cups lukewarm water
1 cup extra virgin olive oil

Combine all ingredients. Mix in breadcrumbs & add water. Shape by hand into 2” balls and place on a baking sheet. Bake in 350 degree oven for half hour.

SEARED SCALLOPS WITH LEMON & DILL (FOR 2)

2 Tbsp butter
12 large diver’s sea scallops
¼ cup shallots, finely chopped
½ cup dry white wine
1 Tbsp fresh dill, chopped
1 Tbsp fresh lemon juice
1 Tsp grated lemon peel (lemon zest)
2 Tbsp chilled butter, cut into cubes
Salt & pepper

Melt 1 Tbsp butter in large skillet. Sprinkle salt & pepper onto scallops. Add scallops to pan. Cook 2-3 minutes per side. Transfer to plate & keep warm.

Melt 1 Tbsp butter in same skillet. Add shallots, sauté 1 minute. Add wine, raise heat to high and cook until reduced by half. Stir in dill, lemon juice and zest. Remove from pan & add butter off fire. Pour on scallops & serve immediately.

TUBETTINI PASTA WITH WHITE WINE AND CLAMS

2 Tbsp olive oil
8 oz sweet Italian sausage, casing removed
4 cloves garlic
2 dozen clams, cleaned & scrubbed
½ cup dry white wine
2 ½ cups chicken broth
1 cup cooked pasta
1 ½ cup canned great northern beans, drained
1 tsp hot red pepper flakes
½ cup parmesan cheese
2 tbsp fresh basil
2 tbsp fresh parsley

Heat oil & sausage. Add garlic, wine & clams. Cover & cook. Add broth & bring to boil. Add pasta & beans. Heat through and add red pepper & parmesan cheese. Top with parsley and basil and serve.
